I’m Scott Watkins; chef, pit-master, and barbecue enthusiast. I have been cooking since 2004…woah. I have experience in fine dining, casual dining, catering, American, Thai, Japanese, Italian and barbecue of course. I started my barbecue journey in 2021 when it was just too damn hot to cook inside. I made some ribs on a Coleman camp stove and they were terrible! Shortly after that I acquired a Pit Boss pellet smoker and Aaron Franklin’s Barbecue book and the obsession was born. Upon relocating to Oregon, I got a job at Paper Plate BBQ and began learning how to smoke with a real wood fire. After being the pit master/sous chef at Paper Plate, I decided it was time to make my dream become a reality and Harley Q’s Barbecue became a real thing. I smoke all of the meats we serve daily, nothing is EVER re-heated. We make all of our sides and our sauces in house as well.
